Pumpkin Bran Flax Muffins offer all the nutritional advantage of the omega-3's and fiber with a fall flavor. This is a simple modification of the existing Bran Flax Muffin recipe. This recipe was not tested by Bob's Red Mill.

Ingredients

  • 1-1/2 cups Unbleached White All-Purpose Flour
  • 3/4 cup Flaxseed Meal
  • 3/4 cup Oat Bran Cereal or Organic Oat Bran Cereal
  • 1 cup Brown Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • 15 oz Pumpkin canned
  • 1/2 cup Applesauce
  • 1/2 cup Currants or Dried Cranberries
  • 1 cup Nuts (optional)
  • 3/4 cup Milk
  • 2 Eggs
  • 1 tsp Vanilla Extract

Instructions

  1. Heat oven to 350°F. Grease muffin tins.
  2. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice. Stir in pumpkin, applesauce, currants or cranberries and nuts.
  3. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix. Fill muffin tins.
  4. Bake at 350 for 15-20 minutes.



    Makes 15 servings.
