In a food processor, grind oats to a fine crumb. Add baking powder and almond protein powder and pulse to combine. Add eggs, egg whites, yogurt, maple syrup and vanilla. Blend until the batter is smooth.
Heat waffle iron and cook according to manufacturer’s instructions until golden brown. You will need roughly ⅓–½ cup batter per triangle/square, depending on your waffle iron size.
If using a round waffle iron, separate waffles into triangles; if using a square waffle iron, separate the squares and cut each one in half, making a rectangle.
Let waffles cool completely. Insert a wooden ice pop stick into the base of each waffle piece.
Dip waffles in melted chocolate or drizzle with peanut butter or chocolate.
Sprinkle on toppings (coconut, pistachios, freeze-dried berries, cocoa nibs) before the chocolate sets. Place on parchment paper or a wire rack and let the chocolate firm.
