Peanut Butter Chocolate Chip Oat Muffins

Ingredients

Instructions

  1. Preheat the oven to 350°F.
  2. Using a mixer, blend eggs, Greek yogurt, milk, oil and peanut butter.
  3. In a separate bowl, whisk together dry ingredients: sugar, cocoa powder, flour and baking powder.
  4. Add dry ingredients to wet, mix until just combined.
  5. Mix in vanilla extract.
  6. Stir in chocolate chips and oats.
  7. Pour the mixture into a non-stick muffin tin and fill to about 3/4 full.
  8. Bake the muffins for 5 minutes, then top with a sprinkle of additional chocolate chips and oats.
  9. Bake for another 10-15 minutes, until a toothpick in the middle of the muffins comes out with just a few crumbs.
