Using a small food processor or spice grinder, grind ½ cup Bob’s Red Mill Protein Oats until the oats are mostly broken down into a chunky flour, 1–2 minutes.
In a large mixing bowl, stir together the processed oats with remaining 1 cup Protein Oats, shredded coconut, sesame seeds and hemp hearts.
In a separate bowl, whisk together peanut butter, honey and vanilla. Pour this mixture into the bowl with the dry ingredients, mixing until well combined.
Fold in mini chocolate chips.
Form mixture into balls using a spoon or spring-loaded scoop, rolling between your fingers to create smooth edges. Chill for at least 30 minutes before eating for the best texture.
Place in an airtight container and refrigerate for up to 1 week.
