Ingredients

  • 1 ½ cups Quick Cooking Rolled Oats (135 g)
  • 1 ¼ cups mashed Bananas, about 2 large Bananas
  • ½ cup canned Coconut Milk (118 mL)
  • 1 Tbsp Fresh Lemon Juice (15 mL)
  • 3 Eggs
  • 1 Tbsp Maple Syrup (15 mL)
  • 1 ½ tsp Baking Powder
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • ½ tsp Kosher Salt

Instructions

  1. Grind oats in a blender for about 30 seconds, using a spatula to push them down if needed.
  2. Add remaining ingredients. Blend until smooth, which will take 1–2 minutes. Let sit for about 10 minutes.
  3. Heat a lightly greased griddle or pan over medium-low. Pour ¼-cup portions of batter onto the hot griddle or pan. Cook until bubbly, then flip and let cook until done and the center is set, 2–3 minutes per side.
