Grind oats in a blender for about 30 seconds, using a spatula to push them down if needed.
Add remaining ingredients. Blend until smooth, which will take 1–2 minutes. Let sit for about 10 minutes.
Heat a lightly greased griddle or pan over medium-low. Pour ¼-cup portions of batter onto the hot griddle or pan. Cook until bubbly, then flip and let cook until done and the center is set, 2–3 minutes per side.
