Ingredients

  • 3/4 cup Whole Wheat Pastry Flour or Organic Whole Wheat Pastry Flour
  • 3/4 cup Oat Bran Cereal or Organic Oat Bran Cereal
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/3 cup Bananas mashed
  • 1/2 cup Yogurt plain
  • 2 Egg Whites or 1 Whole Egg
  • 2 Tbsp Oil
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Shredded Carrots
  • 1/2 cup chopped Dates
  • 1/2 cup Chopped Walnuts

Instructions

  1. Mix together dry ingredients. Mix wet ingredients in a separate bowl. Combine the two mixtures and stir till moistened. Fold in carrots, dates and walnuts.
  2. Lightly grease or line muffin tin with paper cups and fill 2/3 full. Bake at 400°F for 18-20 minutes.
