Line an 8-inch square baking pan with a sheet of wax paper that hangs over two of the edges (for pulling the bars out of the pan when they are done).
Mix muesli, freeze-dried strawberries and pumpkin seeds in a large bowl and set it near the stove.
Combine honey and almond butter in a small saucepan over medium heat, stirring with a silicone spatula until smooth. Continue cooking, stirring constantly, until the mixture thickens to the consistency of caramel sauce, 4-5 minutes. Immediately remove the pan from the heat and drizzle over the muesli. Working quickly, use the spatula to mix and mash the two together until the muesli is evenly coated. Scrape into the prepared pan and use the spatula to press into an even, flat layer all the way to the edges of the pan. Sprinkle with flaky sea salt.
Refrigerate for 1 hour to set, then cut into 10 bars. The bars will keep in the refrigerator for up to 2 weeks.
