There’s something special about a sweet treat made just for you. This Magic Mug Cake is a cozy, whole grain breakfast—or dessert—you can whip up anytime. Made with one packet of our Whole Grain Instant Oatmeal (any flavor), our signature four oat blend bakes up soft, fluffy, and delicious in less than two minutes in the microwave. Add chocolate, fruit or nuts to match your mood and make it your own.

Ingredients

  • 1 packet Whole Grain Instant Oatmeal (any flavor) for a fluffier, finer texture, pulse the oats in a blender to create a coarse “flour”
  • 2 Tbsp Gluten Free 1-to-1 Baking Flour
  • ¼ tsp Baking Powder
  • 1 Tbsp Granulated Sugar or Brown Sugar if using an already sweetened oat packet, adjust the sugar to 1 ½ tsp
  • Pinch of Salt
  • 1 Tbsp melted Butter
  • 3 Tbsp Milk
  • 1 Tbsp Yogurt or Sour Cream
  • ½ tsp Vanilla Extract
Optional Mix-ins
  • 1 Tbsp Chocolate Chips, chopped Nuts, ground Spices, dried Fruit or even a small handful of fresh Berries

Instructions

  1. In a microwave-safe mug, stir together oatmeal packet, flour, baking powder, sugar and salt.

  2. Add melted butter, milk, yogurt or sour cream, and vanilla. Stir until batter is smooth. Mix in any desired add-ins

  3. Microwave on high for 70–90 seconds. The cake should look set and bounce back when gently pressed.

  4. Allow to cool for 1–2 minutes before enjoying, it will be hot!

  5. Eat as is, or top with your favorite nut butter, jam, a dollop of yogurt, chopped nuts or fresh fruit.
