Preheat oven to 350°F. Line two baking sheets with parchment paper or lightly grease with butter. In a small bowl, combine the baking soda and warm water.
In a large bowl, cream the butter with the sugars. Beat in the egg, baking soda mixture, flour, and vanilla extract. Stir in the granola, chocolate chips, and raisins.
Drop rounded teaspoons of the dough about 4-inches apart onto the prepared baking sheets. With a fork, flatten and spread each mount into a round (about 3-inches in diameter). Bake cookies for 7 minutes or until golden brown.
