Ingredients

  • 1/4 cup Shortening (Crisco or Non-hydrogenated Soy-Free Vegetable)
  • 1 cup Sugar
  • 1 Egg
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1 cup Gluten Free Pancake Mix
  • 1 1/2 cups Gluten Free Steel Cut Oats or Gluten Free Organic Steel Cut Oats
  • 1/4 cup Mini Chocolate Chips (Enjoy Life brand preferred)

Instructions

  1. Pre-heat oven to 375°F.
  2. Cream together shortening and sugar.
  3. Add 1 egg to mix, blend well.
  4. Add cinnamon, salt and pancake mix, beat for about a minute.
  5. Add oats and blend together.
  6. Add chocolate chips.
  7. Roll into balls, place on non-stick baking sheet and bake about 15 minutes. Let cool 5-10 minutes and enjoy with your favorite non dairy milk!
