Gluten Free Oat Flour Quick Bread

This is a delicious, slightly sweet bread with a nice whole grain flavor. It’s like eating a bowl of oatmeal in bread form.

Ingredients

  • 2 cups Gluten Free Oat Flour (240 g)
  • ⅔ cup Sugar or Golden Monk Fruit Sweetener (144 g)
  • 1 ½ tsp Baking Powder
  • ¼ tsp Salt
  • 1 cup Unsweetened Applesauce (280 g)
  • ¼ cup Vanilla Almond Milk (60 mL)
  • 2 Eggs
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Cane Sugar, topping

Instructions

  1. Preheat oven to 350°F. Spray three mini loaf pans or one 9 x 5 loaf pan with oil.
  2. In a large mixing bowl, combine oat flour, sugar or sweetener, baking powder and salt. Whisk to combine.
  3. Add applesauce, milk, eggs and apple cider vinegar to the flour mixture and whisk until smooth.
  4. Evenly distribute into prepared pans and sprinkle cane sugar on top of each loaf. Bake 25-30 minutes for mini loaves and 45-50 minutes for a large loaf. A toothpick inserted in the center should come out clean when the bread is done. Allow to cool in the pan for 15 minutes before removing, and enjoy.
