Note: This bread doesn’t bake up tall like a traditional sandwich loaf. Instead, it’s meant to be sliced lengthwise!
Preheat oven to 375°F. Grease a 9 x 5-inch loaf pan with nonstick spray. (Optional: line with a parchment sling for easy removal.)
In a food processor or blender, blend cottage cheese until completely smooth.
In a mixing bowl, stir together self-rising flour, salt and garlic powder. Add blended cottage cheese and mix until the dough just comes together.
With lightly oiled hands, shape dough into a log roughly the length of the pan. Place it in the loaf pan and pat it down so it fills the bottom evenly.
In a small bowl, whisk together egg, water and salt. Brush the egg wash over the dough and sprinkle with sesame seeds.
Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out with just a few moist crumbs.
Remove from the pan immediately and cool on a wire rack before slicing.
Use a serrated knife to slice the loaf horizontally.
Spread cut sides with mayonnaise, mustard or other condiments.
Layer the bottom half with turkey, salami or charcuterie, greens, pepperoncini and cheese. Top with the remaining bread.
Slice into 3–4 sandwiches. Secure each piece with a toothpick, if desired.
