Easy Quinoa Pilaf

This delicious Easy Quinoa Pilaf is the perfect side dish: packed full of protein, fiber and flavor! Vary the vegetables and add different herbs to customize. Recipe by Chef Billy Parisi.

Ingredients

  • 4 cups Water
  • 2 cups Organic Quinoa Grain
  • 2 Tbsp Unsalted Butter
  • 2 Carrots peeled and small diced
  • 2 Celery Stalks small diced
  • 1 Yellow Onion peeled and small diced
  • 2 cups sliced Button Mushrooms
  • Salt and Pepper to taste

Instructions

  1. Bring the water to a boil in a medium-sized pot and then add in the quinoa and return it to a boil. Cover and simmer on low heat for 12 minutes or until the quinoa is cooked and tender. Keep warm.
  2. In a large sauté pan over low heat, add in the butter and melt.
  3. Next, add in the carrots, celery, onion and mushrooms and cook for 4-6 minutes, or until the vegetables are slightly crunchy. Keep warm.
  4. Once the quinoa is done, transfer it to the sauté pan with vegetables and mix until combined.
  5. Serve in a bowl and add on optional chopped parsley garnish.
