Instructions

  1. Mix together flour, cornmeal, baking powder, baking soda, and salt in a medium bowl. In a large bowl, whisk together buttermilk and egg. Add dry mixture to the buttermilk mixture and gently mix until just blended.
  2. Fry on a hot, greased griddle until golden brown, turning once, 2 - 3 minutes per side. Serve with maple syrup.
