Ingredients

  • 1 cup Sour Cream
  • 1 (14.75 oz) can Cream-Style Corn
  • 1 (8.5 oz) can Corn Kernels, drained
  • 3 Eggs
  • ¾ cup Butter, melted
  • 1 package Golden Cornbread Mix
  • 1 tsp Salt

Instructions

  1. Preheat oven to 375°F. 

  2. In a large bowl, whisk together sour cream, cream-style corn, corn kernels, eggs and melted butter until smooth. Add the cornbread mix and salt and stir until fully combined. 

  3. Generously spray a muffin tin with nonstick spray. Spoon batter into muffin cups, filling each about ¼ inch from the top. Bake for 25–30 minutes, or until golden brown and puffed on top. 

  4. Remove muffins from the tin immediately and cool on a wire rack. Serve warm.
