I sure love red velvet! When it’s topped with a sweet glaze and cute snowflake sprinkles, it just makes the whole season a little bit happier. These chocolate chip red velvet mini loaves are so incredibly easy to bake. Once they're cool you can remove and add the simple two-ingredient glaze. I’m telling you, it’s so easy but no one will be the wiser because of how pretty they are.

Preheat oven to 350°F. Spray bottoms only of three mini loaf pans with baking spray, and set aside.
In a small saucepan, combine bittersweet chocolate andd water. Heat over low, stirring occasionally until chocolate is melted. Remove from heat and set aside to cool to room temperature.
In a large bowl, combine brown sugar, butter, eggs and vanilla. Whisk well until creamy.
Add in chocolate mixture and sour cream, and whisk again until smooth. Next, beat in red food color, followed by flour, baking soda, salt and mini chocolate chips. Spoon into prepared loaf pans.
Bake 35-40 minutes or until toothpick test is clean. Cool in pans on a cooling rack. Once cool, remove and prepare your icing.
To make icing, place powdered sugar in a bowl and whisk in 1 tablespoon of milk at a time using a fork until you achieve the desired consistency.
Drizzle over loaves, sprinkle with snowflake sprinkles and enjoy--or wrap and give away.
