Chili Cornbread Casserole

This incredibly easy casserole is also incredibly delicious! We used our 13 Bean Chili, but you can use whatever chili you prefer.

Ingredients

  • 5 cups prepared Chili
  • ½ package Gluten Free Cornbread Mix (283 g)
  • ¾ cup Milk or Dairy Free Milk (177 mL)
  • 1 Egg
  • ¼ cup melted Butter or Oil
Optional Garnish
  • Shredded Cheddar Cheese
  • Sour Cream
  • fresh Cilantro
  • Lime
  • Pickled or Fresh Jalapenos

Instructions

  1. Preheat the oven to 375°F. Grease a 13 x 9-inch casserole dish.
  2. Place cornmeal mix in a large mixing bowl. Add milk, egg, and butter or oil to the mix. Mix until blended. Then mix vigorously for 30 seconds more.
  3. Spread the chili in the bottom of the casserole dish. Next evenly distribute the cornbread mix over the chili and careful spread to cover the chili.
  4. Place in the oven and bake for 30–40 minutes, or until the cornbread is golden brown. A toothpick inserted in the center of the cornbread should come out clean.
  5. Serve immediately and garnish with your favorite toppings.
