Chia Cranberry Sauce

Chia seeds are not only a great source of omega 3 fatty acids, fiber and protein, but they’re also an amazing thickener. This recipe is a delicious low-sugar version of the traditional holiday condiment. Tart and juicy with a hint of citrus, this tasty sauce perfectly complements any holiday table. If you like a sweeter sauce, add your preferred sweetener to taste. Recipe by Tony Shasteen.

Ingredients

  • 12 oz Fresh Cranberries (340 g)
  • ¼ cup Organic Chia Seeds (52 g)
  • 1 Tbsp freshly grated ginger*
  • 1 Tbsp Orange Zest
  • 1 tsp Aromatic Bitters
  • Juice from 1 large Orange (about ⅓ cup)
  • 1 cup Water

Instructions

  1. Combine all ingredients in a medium pot and cook over medium heat for 5–10 minutes, until the mixture thickens. The mixture will be more of a brownish red color, but will turn red after it cools.
  2. Once thickened, remove sauce from heat and allow to cool slightly. Poor into a heat-resistant bowl and refrigerate overnight. Serve chilled.
