Ingredients

  • 1 cup Dried Tart Cherries
  • 1/4 cup chopped Dates
  • 1 cup Hot Water
  • 1 cup Hazelnut Flour
  • 1/4 tsp Ground Cinnamon
  • 1/8 tsp Salt
  • 1/8 tsp Almond Extract
  • 1/4 cup coarsely chopped, toasted Hazelnuts

Instructions

  1. Combine cherries, dates and water. Soak until soft, about 10 minutes.
  2. Meanwhile, line a 9 x 5-inch loaf pan with plastic wrap or waxed paper.
  3. Drain the water off the soaked fruit.
  4. Place the fruit, hazelnut meal, cinnamon, salt, almond extract and chopped hazelnuts in a food processor. Process until well combined, about 1 minute.
  5. Transfer the mixture to the prepared pan. Cover with a piece of plastic wrap or waxed paper and press down to flatten to a smooth, even thickness. Refrigerate for at least 30 minutes.
  6. Remove from pan and cut into equal-sized bars.
