Caprese Grain Salad

The classic Italian summer salad combined with a flavorful mix of whole grains.  This recipe can be found on our bags of Whole Grain Medley.

Ingredients

  • 1-1/2 cups Bob's Red Mill Whole Grain Medley
  • 4-1/2 cups Water
  • 1/2 cup Balsamic Vinegar
  • 1/4 cup Honey
  • 2 cups Tomatoes seeded and chopped (about 3 - 4 large, 1/1/4 lbs.)
  • 8 oz Pearl Mozzarella drained or Ciliegine Mozzarella, drained and halved
  • 1 cup Basil torn
  • Kosher Salt and Pepper to taste

Instructions

  1. Combine water and Bob’s Red Mill Whole Grain Medley in a medium pot. Cover and bring to a boil; reduce heat and simmer until grains are soft, 60 – 90 minutes. Drain grains very well and set aside to cool, about 45 minutes.
  2. Meanwhile, in a small saucepan, combine balsamic vinegar and honey. Simmer over medium-low heat until reduced by ¼, about 10 minutes. Set aside to cool.
  3. When the grains have thoroughly cooled, combine with the tomatoes, mozzarella, basil, balsamic mixture and salt and pepper to taste. Mix well.
