Ingredients

  • 1 cup Bulgur
  • 4 Tbsp Olive Oil
  • Juice of 1 lemon
  • 1 Tbsp Water
  • 6 Celery Stalks, chopped stalks, chopped
  • 3 Tomatoes medium sized, seeded & chopped
  • 1 bunch Green Onion chopped
  • 1 cup chopped Parsley fresh & chopped
  • 1/8 tsp Ground Pepper
  • 1/4 tsp Sea Salt

Instructions

  1. Presoak bulgur in water to cover for 1 hour.
  2. Rinse bulgur and set aside.
  3. In a bowl combine olive oil, juice from one lemon and water, and presoaked and rinsed bulgur. Marinate for 15-20 minutes.
  4. In a large serving bowl, toss together bulgur mixture with remaining ingredients. Serve salad at room temperature or cold.
