Heat oven to 350°F. Lightly coat bread pan with spray oil.
In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, nutmeg and sweetener). Make a well in the center of the dry ingredients and add the oil, eggs, water and vanilla. Mix with a fork or whisk until blended, approximately one minute.
Spread batter evenly into bread pan. Bake 50-60 minutes. Serve warm with your favorite butter or cheese.
