Ingredients

  • 2 cups Low-Carb Baking Mix
  • 3 tsp Baking Powder
  • 4 Low Carb Sweetener (packets)
  • 2 Eggs
  • 1 to 1-1/4 cup Water
  • 2 Tbsp Canola Oil
  • 1/2 tsp Vanilla Extract

Instructions

  1. Heat oven to 350°F. Lightly coat muffin tins with spray oil.
  2. In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of dry ingredients and add the eggs, water, oil and vanilla. Mix with a fork or whisk until just blended. Take care not to overmix.
  3. Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm with your favorite butter or cheese.
