Hoe cakes can be served as a sweet main breakfast dish or served as a savory side dish at lunch or dinner. For breakfast serve with maple syrup or homemade jams; at dinner serve with fresh fish or pork.
Combine cornmeal, salt and baking powder. Add melted butter and only enough water to make a soft dough. Form soft cakes about 1/2 inch thick and cook on a hot, lightly greased griddle until golden brown, turning once.
