Ingredients

  • 1/4 cup Nuts finely ground*
  • 1-3/4 cups Organic Amaranth Flour
  • 1/2 cup Arrowroot Starch
  • 2 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 1/2 cup Nuts coarsely chopped
  • 1-1/2 cups Banana mashed
  • 1/2 cup Honey
  • 2 Eggs
  • 1/4 cup Oil
  • 2 Tbsp Lemon Juice
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat oven to 350°F. Lightly oil a 9-inch square baking dish.
  2. Combine nuts, amaranth flour, arrowroot starch, baking soda and salt in a large bowl and set aside.
  3. In a blender or food processor, combine banana, honey, eggs, oil, lemon juice and vanilla extract and process for 30 seconds.
  4. Pour the liquid mixture over the dry mixture and gently stir together. DO NOT BEAT.
  5. Pour into the prepared pan and bake until the top springs back when touched in the center and a toothpick test comes out dry, about 40 minutes.
