Classic Banana Cream Pie is one of the easiest cream pies to make: just cook a sweet cream, egg and cornstarch mixture until it begin to thicken, the fold in some sliced bananas and you've got pie! This recipe can be found on our Corn Starch labels.
Place milk in a medium pot and set over medium heat. In a small bowl, whisk together sugar, cornstarch and salt. Add sugar mixture to the milk and begin heating over medium heat to barely a simmer, whisking frequently. Meanwhile, place yolks in a medium sized bowl and whisk to incorporate.
Once the milk mixture is just about to simmer, pour about 1/2 cup hot milk into the yolks. Whisk into the yolks thoroughly, then pour back into the hot milk mixture. Whisk continuously until the mixture begins to thicken substantially and thoroughly coats the back of a spoon. Remove from heat, add the butter and vanilla, and continue to whisk until the butter has completely incorporated into the mixture. Gently fold in sliced bananas, then pour entire mixture into the baked pie crust, smoothing out any air pockets. Chill until set, at least 1 hour.
To serve, whip cream with powdered sugar to soft peaks. Pile whipped cream on top of pie, slice and serve.
