These Banana Chocolate Chip Muffins are quick, easy and irresistibly soft, plus they’re made with our new High Fiber Flour, which delivers 6 grams of fiber per serving but bakes up more like regular flour. Sweet bananas and melty chocolate chips create a treat everyone will reach for at brunch, breakfast or snack time, making it simple to gather friends, family or neighbors around the table for a shared moment of homemade goodness.

Ingredients

  • 1 ½ cups High Fiber Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 1 ½ cups mashed Banana (about 3–4 medium)
  • 6 Tbsp Unsalted Butter, melted
  • ⅔ cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 3 Tbsp Milk
  • 1 cup Mini Chocolate Chips
  • Optional: Extra Chocolate Chips, for topping

Instructions

  1. Preheat oven to 350°F. Line a 6-count jumbo muffin pan with paper liners. In a medium bowl, whisk flour, baking powder, baking soda and salt. 

  2. In a large bowl, mix banana, butter, brown sugar, egg, vanilla and milk. Add dry ingredients to wet and stir until just combined. Fold in chocolate chips. 

  3. Scoop into muffin cups. Top with extra chocolate chips, if using. Bake 25–30 minutes, until a toothpick comes out clean. Cool in pan for 10 minutes, then unmold and cool completely on a rack.
