Banana Bread with Almond Flour

This moist, dense banana bread is made with a delightful mixture of Almond Flour, Tapioca Flour and Flaxseed Meal. If you have an extra banana on hand, slice and add it to the top as decoration!

Ingredients

  • 1 cup Almond Flour
  • ½ cup Tapioca Flour
  • 2 Tbsp Flaxseed Meal
  • 1 tsp Baking Soda
  • ½ tsp Kosher Salt
  • ¾ cup Organic Coconut Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • ½ cup melted coconut oil
  • 1 ½ cups Mashed Bananas (about 3 medium)
  • ½ cup toasted, chopped Walnuts (optional)

Instructions

  1. Preheat oven to 350°F. Spray an 8 x 4-inch loaf pan with pan spray and set aside.
  2. In a medium bowl, combine flours, flaxseed meal, baking soda and salt; set aside.
  3. In a large bowl, whisk together sugar and eggs until light, fluffy and almost doubled in size, 5–7 minutes. Add vanilla extract, then slowly add oil until evenly incorporated. Fold in mashed bananas, followed by the dry ingredients. Gently fold in walnuts, if using.
  4. Pour batter into prepared pan and bake until a toothpick comes out clean, about 45 minutes. Let cool 30 minutes before removing from pan.
