Ingredients

  • 1 cup Evaporated Cane Sugar
  • 1 cup Applesauce
  • 1/3 cup Oil
  • 2 tsp Vanilla Extract
  • 1 cup Apple Juice
  • 2 tsp Ground Cinnamon
  • 2 cups Whole Wheat Pastry Flour or Organic Whole Wheat Pastry Flour
  • 1/2 cup Oat Bran Cereal or Organic Oat Bran Cereal
  • 1/4 cup Organic Golden Flaxseed Meal
  • 1/2 cup Chopped Walnuts
  • 2 tsp Baking Powder
  • 1/2 tsp Sea Salt

Instructions

  1. Whisk together the cinnamon, flour, oat bran, flaxseed meal, walnuts, baking powder and salt in a bowl.
  2. In another bowl, combine the evaporated cane juice, applesauce, oil and vanilla. Slowly stir in the apple juice until incorporated. Pour the dry ingredients into the wet and mix with a spatula until it is all mixed together, but careful not to over mix.
  3. Pour ingredients into a greased springform pan. Bake at 350°F for 50 minutes.
