Apple Spice No-Bake Cookies

These delicious no-bake cookies are made with whole grain oats, coconut sugar and apples, for a treat that's so easy to make. Perfect for fall!

Ingredients

  • 1 cup Organic Coconut Sugar
  • ¼ cup Unsalted Butter
  • 1 tsp Pumpkin Pie Spice
  • ¾ cup diced Apple
  • ½ tsp Kosher Salt
  • 3 cups Old Fashioned Rolled Oats
  • 1 tsp Vanilla Extract
  • ½ tsp Lemon Juice
  • ¾ cup Almond Butter

Instructions

  1. In a large saucepan, melt together coconut sugar, butter, pumpkin pie spice, diced apple and salt. Bring to a boil and cook for 1 minute. Remove from heat and stir in remaining ingredients. Use a spoon to drop cookies on either wax or parchment paper. Refrigerate for 30 minutes to allow cookies to harden.
