Debbi serves these dairy, egg and gluten free pancakes to people who have no idea they are made "special" and thought they were delicious! This recipe was not tested by Bob's Red Mill.
Saute apple slices in nonstick skillet; sprinkle with cinnamon.
Mix together GF flour, sugar, baking powder and salt. Mix in applesauce, oil and cider until well blended. Pour into heated skillet. Lay cooked apple slices on top and sprinkle on blueberries to taste. Cook until bubbles form on surface then turn. Heat until golden brown.
