Ingredients

Vegetable Oil
1/4 cup
Honey
3 Tbsp
Water
1 cup
Organic Amaranth Flour
sifted
1/3 cup
Arrowroot Starch
sifted
1 tsp
Baking Powder
1/8 tsp
Sea Salt
1 tsp
Vanilla Extract
1/3 cup
Carob Chips
1/3 cup
Chopped Walnuts
or chopped Pecans
Instructions
Preheat oven to 350°F. Lightly grease a cookie sheet, set aside.
Combine oil, honey and water in saucepan. Heat gently to melt honey and remove from heat to cool.
Sift flours before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Fold in carob chips and chopped nuts.
Drop batter by rounded teaspoon onto prepared cookie sheet.
Bake 12 - 15 minutes, until cookies a golden. Remove to cool on a wire rack.
