The refined version of organic brown rice flour, organic white rice flour can be used interchangeably with brown rice flour. The second largest world crop, rice is a staple food in Asia where, unlike most grains, it is grown on small paddies and harvested by hand, just as it has been for centuries. Our white rice flour is stone ground from premium California white rice. It is lighter, milder and easier to digest than wheat flour. Some people find white rice flour to be slightly gritty, but many find it preferable to bean flours.

White rice flour is naturally gluten-free, rich in carbohydrates and low in fat. White rice flour can be used to bake cakes, cookies, dumplings, breads and more, as well as thicken sauces and coat fish and other proteins. We love this flour and use it a lot. We are gluten free and have tried other brands but nothing equals this one for its texture and quality. Worth the price.

My original Scottish shortbread recipe calls for 1/3 rice flour to 2/3's regular flour. I have been making this for years. The rice flour gives it a more tender crust. Make shortbread for the holidays yearly.

My research revealed that rice is one of the most heavily sprayed of crops, therefore it is so important to buy organic rice products whenever possible. We use organic white rice flour as substitute for cornmeal in our skillet corn bread recipe, and it is moist, yields a nice brown crust, and is incredibly delicious.
