Bob's Red Mill Gluten Free Corn Grits are made using only the finest golden corn for a rich flavor that is sure to please your palate, any meal of the day. Native Americans offered the first settlers in the US bowls of Rockahominie, a dish consisting of ground up corn grain cooked into a creamy mixture. It is believed this corn mixture kept many of the settlers alive during those cold winters. Today, corn grits hold a prominent place in soul food and southern dishes. They are also used as a side or a pairing with dishes containing very heavily spiced ingredients. Grits may be eaten covered in gravy, cheese or butter and salt; or served with seafood, meats or vegetables. Grits also make a delightful breakfast when served as a hot cereal topped with milk and honey or brown sugar. Grits are a great way to help meet your body's daily energy needs. The fiber content in grits helps you feel full for longer periods of time and promotes regular digestive functioning. Polenta is a dish that has been popular in Italian and other European cuisine, and is now gaining fans in America as well. It is made from course ground corn (grits), boiled in water to create a porridge. This can be topped and served immediately for a warm corn side dish. Alternatively, you can spread the porridge in a pan and refrigerate it until it sets. Then the polenta can be cut into squares and baked, grilled or fried. Similar to pasta, cooked polenta is delicious topped with marinara sauce, shredded cheese, or grilled or roasted vegetables. Many gourmet Italian and Mediterranean restaurants feature our polenta. Good quality corn grits for my traditional `mamaliga`
Corn grits (polenta) is such a basic product so it's hard to be amazed by it, but Bob's Red Mill product is good quality.
I'm Romanian and `mamaliga` (our version of polenta) is a staple dish. The corn grits from Bob's Red Mill are not finely milled (they have some grit), so the polenta I make resembles a lot in consistency with what my grandparents used to cook with their home-milled corn.
The corn grits cook fast, either on the stove top or microwave. You can add more or less water, depending on how thick you like it. I usually like to add 1.5x more water than the package if I eat it like `porridge`; I use the stated amount of liquid when I later on want to bake or fry in the pan polenta slices. I tried baking with corn grits, worked well for breads and muffins, but finer milled corn would work better; the corn grits give a lot of texture and dryness.

Bob's Red Mill Gluten Free Corn Grits are delicious. They have the natural sweetness of corn, but not the overwhelming sweetness of cane sugar. They're smooth but retain a bit of crunch, which makes the texture perfect. I'd recommend Gluten Free Corn Grits to anyone--not just people with gluten intolerance.

These are the very best tasting grits. The taste and texture are much better than any white grits we have tried. Living in the south never tried corn grits until diagnosed with celiac disease. Only true gluten free grits are the gluten free corn grits. Not disappointed at all! Very good.
