Easy Gluten Free Cinnamon Bread Recipe

This easy Gluten Free Cinnamon Bread recipe is the perfect treat to wake up to on the weekends. Made with an easy ingredient list and a short prep time, you can get this delicious quick bread in the oven in no time so you and enjoy a cup of coffee while your bread bakes. Trust us, your family will appreciate waking up to the amazing aroma of cinnamon and sugar baking first thing in the morning. This Gluten Free Cinnamon Bread recipe is a family favorite in my house. The original recipe is from my mother-in-law and I have changed it throughout the years to make it dairy and gluten free to suite our family's needs. If you like mixing your own flours, this recipe works well too. However, I've recently developed this new version of the recipe to use our Gluten Free 1 to 1 Flour which makes it even easier to bake this cinnamon goodness. I personally love making mini loaves with this recipe. My group prefers the corner pieces so this method gives us far less fights and way more enjoyment. You can absolutely make this into a larger loaf with no problem. This Gluten Free Cinnamon Bread is equally as delicious baked as a large loaf for a crowd. We also love that it bakes faster in the mini loaf pans so we can dive into that cinnamon sugar deliciousness even faster. Can you make this bread with All Purpose Flour? You can easily exchange the Gluten Free 1 to 1 Flour in this recipe with All Purpose Flour without having to change anything else in the recipe. Whether you bake this bread gluten free or gluten full, you will love the moist delicious cinnamon goodness enveloped in a crispy crunchy sugar topping.

Gluten Free Cinnamon Bread

  • ¾ cup Cane Sugar (162 g)
  • 2 cups Bob’s Red Mill White 1 to 1 Flour (296 g)
  • 2 tsp Cinnamon
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 cup Milk or Dairy Free Milk Alternative (240mL)
  • 1/4 cup Olive Oil (60 mL)
  • 1 TBSP Apple Cider Vinegar (15 mL)
  • 1 Egg
  • 1 tsp Vanilla
Topping Preheat oven to 350°F. Coat three 5.75″ x 3.35″ x 2.25″ mini loaf pans or one 9″ x 5″ loaf pan with nonstick spray. Combine milk, oil, vinegar, egg, and vanilla in a bowl. In a separate bowl, combine the sugar, flour, cinnamon, baking soda, baking powder, and salt. Gradually add the dry ingredients into the wet. Mix just until combined. Pour into prepared loaf pan. In a small bowl, mix together the topping ingredients. Evenly sprinkle each loaf with the cinnamon and sugar topping mixture. Bake for 35-40 minutes for mini loaves, 50-60 minutes for a large loaf or until a toothpick inserted in the center comes out mostly clean with a little bit of gooeyness on it. You can remove it from the pan after it has cooled for about 10 minutes or leave it in the pan and give it as a gift.

    Do you think I could make this in an 8x8 pan? More coffee cake than loaf?

      Hi Alexandra - Yes, this recipe would also work in an 8 x 8 square pan. Bake for about 45 minutes or until a toothpick inserted in the center comes out mostly clean. Enjoy!

      Hi Virginia - We didn't test it specifically but I bet a granulated sugar substitute (Stevia, Splenda) would work well here.

      I have used apple sauce or crushed pineapple for granulated sugar; both add quite a bit of liquid as well. They compensate for sweetness but are a little off for texture and moisture. Works best when recipe calls for water or milk so you can simply add less. When making the sugar mixture, if too wet, add some tapioca or cornstarch to compensate.

    Can this recipe be made using just Bob's Red Mill Gluten Free Flour or will I need to add Xanthan Gum? If I need Xanthan Gum, how much?

      Hi Diane, this recipe calls for our Gluten Free 1-to-1 Baking Flour which already has xanthan gum in the mix. You shouldn't need to change anything else. Enjoy! :)

      Perhaps you could use dehydrated apples and to plump them up soak them for 5-10 minutes like raisins. It's just a thought.

      Hi Shirley - that's not something we've tested. This recipe does not require a long knead or any rise time, so it likely would not be beneficial to bake this in a bread machine versus a conventional oven.

    Could I substitute plain vinegar for apple cider vinegar?

    I will never forget opening my first bag of Bob’s oatmeal!! Who knew that oatmeal could smell fresh and delicious?! I am allergic to oatmeal, but I make it for my family. What a difference Bob’s makes to the finished product! Yum!!! I do not have to worry using Bob’s oatmeal as it is g-f. Thanks for making such great products!

    It was delicious but the sugar/ cinnamon on top ended up as a hard shell that actually separated from the rest. I actually made it in a 9x11 casserole dish and just increased the recipe a little. What could’ve made the topping do what it did?

      I Kelly! I spoke with the recipe developer and she said, "I would first make sure the oven was the right temperature (meaning an oven thermometer) and that the oven was fully preheated before the bread was put in the oven. The only thing I can think of is that the temperature wasn't quite right, which made the topping or bread cook at a different rate and separated from each other."
