With Mothers Day right around the corner, we know you have to find something special to help convey how much you love Mom. But there are so many recipes floating around the internet these days, it can be hard to narrow down what you want to bake. You have to decide if you want chocolate, or vanilla, or some other flavor like lemon or cherry or pomegranate. Then do you choose scones, or cakes, or turnovers, or pie? Plus, if you have health considerations, that can factor into your choices, too! Our goal is to make that decision super easy by highlighting four delicious sweet treats we know your mom will go gaga over. The best part is she will love at least one of these treats, even if shes vegetarian or has to steer clear of gluten. Weve got you covered on both counts!

Macadamia Nut Shortbread Cookies Dipped in White Chocolate

These delicious little gems are Hawaii-inspired, using finely chopped macadamia nuts for a crunchy yet tender cookie that will tempt you well beyond having just one. They are made using a base ofgluten free 1-to-1 baking flour,salt, butter, vanilla extract, and sweet maple syrup. The white chocolate theyre dipped in is blended with palm shortening or coconut oil (dealers choice!) along withshredded coconut, giving them flavor and texture. If you dont like shredded coconut, you can always replace it with cacao nibs or sprinkles. This recipe makes approximately 30 cookies, which is plenty for sharing. Youll need about an hour to chill the dough and allow the cookies to cool, but other than that, these little guys are super simple to make, and we know your mom will love them. They require only 20 minutes of prep time, and 12-15 minutes of cooking time.

Cheesecake Fudge Bar

Who can resist something with cheesecake and fudge in the name? Not us, thats for sure, and we bet your mom wont be able to resist this delicious treat either. These fudge bars take a bit of time to prepare, mostly to allow for cooling and chilling, but beyond the time investment, they are easy and fun to make. Even better, theyre vegan, paleo, gluten free, and dairy free, but theyre so good you cant even tell! These bars are made with a base ofpaleo baking flour,flaxseed meal, almond butter, and coconut sugar. The chocolate fudge layer uses almond butter, cocoa powder, and maple syrup, among other goodies, and the cheesecake layer is made up of raw cashews and peeled and diced zucchini! But with the maple syrup, vanilla, coconut oil, and lemon extract, youll be so distracted by the flavor you wont even care theyre actually kinda healthy. You can use seeds, dried fruits, or nuts to decorate them.

Bananas Foster Cookie Bars

If you eat at a lot of restaurants, chances are youve run across a brown sugar and booze-infused dessert called Bananas Foster. Its popular in New Orleans, and banana lovers the world over adore it. When you can combine all of these flavors into a creamy, chewy cookie bar loaded with bananas, whats not to love? This recipe makes 12-16 servings and takes less than an hour to make. It starts with organic unbleached white all purpose flour,baking powder, egg, and finely chopped pecans. Sugar plus almond and vanilla extracts and a pinch ofsalt give these bars flavor, along with cream cheese, powdered sugar, and spiced rum in the frosting. The banana topping is what really makes these cookie bars shine, though, mixed with spiced rum and sanding sugar, and garnished with edible gold leafing for pizzazz.

These cakes use a base ofgluten free 1-to-1 baking powder and bittersweet chocolate, along with sugar and a bit of salt. The real flavor, however, comes from the homemade Nutella filling, using hazelnuts, semi-sweet chocolate chips, cocoa powder, and pure maple syrup blended with other ingredients to make a deliciously decadent and nutty treat your mom will exclaim over for years to come. You can customize these cakes with your own favorite toppings, and they take less than an hour of your time to make. Keep in mind, though--if youre feeding a crowd, you may need to double (or triple) the recipe!
