I used to make popovers every Sunday at a restaurant I worked at about 20 years ago. It was steak night and we served up Yorkshire pudding, which is essentially a popover minus the traditional beef drippings. Popovers are delicious, light, fluffy and go perfectly with that big holiday meal.
Popovers are simple - just 5-ingredients in this recipe making them extremely approachable. One of my favorite parts about popovers is just how easy they are to customize, enhancing the flavor profile to complement your meal. For example, you can absolutely add some cheese to the popovers, or herbs, or like in this recipe some honey for sweetness.
Regardless of the extra ingredients youd like to add to the popovers, the procedure remains exactly the same. It all starts by getting your popover tins extremely hot in the oven while you prepare your recipe. If you dont have popover tins, no problem, you can absolutely use muffin tins.
While the tins are heating in the oven this is great time for the batter. You simply mix your wet ingredients in a bowl, mix your dry ingredients in a separate bowl and then combine them. Since popover recipes are so malleable, I thought it would be awesome to incorporate honey and Bobs Red Mill Organic Whole Wheat Flour.
I love the rustic flavor of Bobs Organic Whole Wheat Flour and the texture that it gives in the popovers. Since whole wheat goes so great with honey, I snuck a little bit of it in there.
Once your batter is ready, you want to take the hot popover or muffin tins out of the oven and evenly distribute the batter between the tins and then immediately put them back in the oven. Popovers take about 25 to 30 minutes for them to cook through. They will rise several inches out of the pan and have the most beautiful golden-brown crust.
Since I cant help myself, I figured I would take this recipe to the next level by making a Parmesan cheese herb butter while the popovers were baking. This is completely optional but very well worth it. Its a simple combo of softened butter, cheese, chives, Parmesan and thyme.
These popovers are just that simple and are beyond delicious. Happy Holidays to everyone!
Add two popover pans, or muffin tins, to an oven that is preheated to 425 and let sit for 10 minutes.
In the meantime, whisk together the eggs, milk, butter and honey in one bowl and set aside.
In a separate large bowl, whisk together the flours and salt and then pour the wet mixture into the flour and salt bowl and whisk until completely combined.
Remove the popover pans from the oven and spray with non-stick spray and evenly divide the batter between 12 popover cups in the pan.
Bake at 425 for 25 to 30 minutes or until golden brown on top and cooked in the center.
While the popovers are in the oven add 4 ounces of softened butter to a bowl along with the parmesan cheese and herbs and mix until combined. Set aside.
