Oatmeal is truly my favorite food. Most people think Im crazy because I literally start every day with oatmeal. Even if Im traveling, I take oatmeal with me. Thank you Bobs Red Mill for making that easier now with your oatmeal cups. Anyway, I put oatmeal in almost everything I eat . . . burgers, baked goods, smoothies. Seriously, I love oatmeal.
You know what else I love? Finding healthier ways to incorporate more protein into my diet. Have you tried the new protein powders from Bobs Red Mill? If not, I highly recommend them. I was so excited when I found out they had
pea protein that was safe for me to eat! I love the flavored varieties, but I really got excited about the unflavored one that I can use in the foods I dont want sweetened, but need the extra protein kick.
Now, these little sausage flavored patties came about after I made sausage for my guys here and started to get a craving from my childhood. Those memories are always my favorites to start developing recipes. They always spark those culinary creative juices. The fennel and sage combination gives these a hint of flavor reminiscent of sausage and adding the higher amount of fennel seeds will really enhance that flavor. These little babies are seriously easy to make, freeze incredibly well, and are versatile in how you want to use them! They are perfect served as a burger, with pasta, or alongside your favorite breakfast. Im not sure if this is only a southern thing, but I smothered a few with grape jelly and I was transported right back to my grandmothers kitchen as a child. I hope you all enjoy them as much as we did!
Fennel and Sage Spiced Lentil Patties
Makes 8 large or 16 small
Vegan, gluten free, dairy free, soy free
Place the lentils in 4 cups water. Bring to a boil. Reduce heat and simmer for 20 minutes or until done. Poor off excess water. Allow to cool slightly. Next, add oats through salsa to the lentils, and mix thoroughly. Place in the refrigerator and allow to cool completely. When ready to make, scoop out about 1/2 cup serving for the large patties and 1/4 cup for small patties, form into a patty, and place on a parchment lined baking sheet. Bake at 400F for 45 minutes, flipping after 30 minutes.
