Combine water and yeast in a large bowl.
Add flour and salt. Mix until a shaggy dough forms.
Place the dough onto a floured surface and knead until it is smooth and slightly tacky. This process should take around 5 minutes.
If the dough remains sticky, knead in more flourone tablespoon at a timeuntil it is smooth.
Place dough into an oiled bowl and toss it to coat evenly.
Cover the bowl with a moist washcloth and allow it to rise for 1 hour until it doubles in size.
Use the dough immediately or refrigerate for up to 3 days.
As the dough rises, preheat the oven to 500F.
Line two baking sheets with parchment paper and divide the dough in half.
