  1. Preheat oven to 400°F. Line an 8x4- or 9x5-inch loaf pan with parchment paper and spray lightly with pan spray.
  2. Whip eggs until light and fluffy, about 5 minutes. Meanwhile, sift together Bob’s Red Mill Natural Almond Meal, Coconut Flour, baking powder and salt.
  3. While the eggs are still whipping, slowly stream in the melted and cooled coconut oil. Fold in the dry ingredients.
  4. Scoop batter into the prepared pan and smooth top.
  5. Bake until a tester inserted in the center comes out clean, about 35 – 45 minutes.
  6. Let cool completely before removing from the baking pan.
