Millet Flour is stone ground and whole grain. It has a subtle flavor, lots of vitamins and minerals, and adds a lovely creamy color to baked goods.

We are always keeping things new and exciting around Bob's Red Mill, so the package you have may vary slightly from the one you see here, but we always promise the same wholesome product.

Which grain was first farmed nearly 10,000 years ago? Which grain was revered as one of five sacred crops in ancient China? Which grain is mentioned in the Old Testament, the writings of Herodotus, and the journals of Marco Polo? The answer is millet! Bob's Red Mill Whole Grain Millet Flour is nutritious, gluten free and 100% freshly ground on century-old stone-buhr millstones.

Millet Flour is wonderfully nutritious and a good source of protein, essential amino acids and dietary fiber. Millet is also an excellent source of manganese, phosphorus and magnesium. Unlike most other grains, this versatile, gluten free grain is alkaline, which makes it easy to digest and helps balance the body’s natural tendency towards acidity.

Our Millet flour has a light, mild flavor, making it perfect for sweet or savory baking. It lends a delicate cake-like crumb to your baked goods. Replace up to 25% of the flour in your recipe with millet flour for added nutrition. In our opinion, millet flour is often overlooked in gluten free baking—it adds whole grain nutrition and has a mild flavor, not something you find often with gluten free flours. I used this to make some cherry-chocolate-almond butter cookies and they were FANTASTIC! I was so pleased with the soft texture and pleasant taste. Am ordering more of this! Review by JJ / (Posted on 5/30/2011)
Love this flour! Yum!
I am guilty of loving this grain and, in particular, this flour. The texture and taste are wonderful for gravy, sauces, and for thickening soups/stews. I also enjoy using this for biscuits and crepes. If I'm serving others baked goods, I mix the millet flour with sweet rice flour or other GF flours I have on hand, but I enjoy it all by itself! I store all my flours in the freezer or fridge. Review by Deb of the GF K / (Posted on 1/22/2011)
I am new to gluten free and with thanksgiving right around the corner I was eager to make my favorite cookies gluten free. I was poorly educated on using/making gluten free flour and subbed this 1:1 for flour in a recipe. the result was less than desirable, very poor aftertaste. I soon found that is just one part of what makes a gluten free flour and want to make sure others who are new to gf k Review by new to gluten f / (Posted on 11/21/2010)
Great for Gluten Free flour combining
This brand of millet flour is a staple in my GF baking. I usually use a ratio of: 1 part brown rice flour:1 part millet flour:1 part sweet rice flour:1 part tapioca starch + some xantham gum. I get GREAT results every recipe! (Not recommended for pie crusts though!) My gluten-eating husband and all of my friends love my creations and no one would guess it is GF! white cream gravy!
Millet flour makes a great white, cream gravy. Review by Lmuecke / (Posted on 9/21/2010)
Bob's Millet flour has a ...
Bob's Millet flour has a lovely smooth texture and almost buttery flavor in baked goods. It makes an excellent base for GF cookies! Try it instead of that gritty rice flour, you'll be glad you did! It should be refrigerated after purchase to prevent it from becoming bitter. (I learned this the hard way.) :) My only complaint is that they don't offer an organic millet flour... Please Bob's???
