  1. In a small bowl, combine the chia seeds with water; set aside and allow to sit for 5 minutes.
  2. Preheat oven to 375°F. Spray an 8 x 8-inch baking pan or 8-inch round pan with cooking spray.
  3. In a large bowl, combine water or milk, chia mixture, oats, baking powder, cinnamon, ginger, and zucchini. Mix together until fully combined.
  4. Pour into the prepared baking dish.
  5. Bake for 25–30 minutes, or until the baked oats are golden brown and firm when touched in the center.
  6. Serve with your favorite topping. We recommend a drizzle of peanut or almond butter for an extra-special treat!
