Combine the yogurt, mashed banana, optional dates, date sugar or stevia, and vanilla and almond extracts thoroughly, and then gently stir in the chia seeds.
Toss in the almonds and extra add-ins of your choice, and place in the refrigerator.
Stir every few minutes for at least fifteen minutes, when the pudding becomes ready to eat. Serve chilled. Wonderful when refrigerated overnight.
