Ingredients

  • 1 3/4 cups Teff Flour
  • 1/2 cup chopped Dates
  • 1 cup Currants
  • 1/2 cup Hazelnuts pieces
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1/2 cup Unsalted Butter
  • 1 cup Cane Sugar
  • 1 Egg beaten
  • 1/4 tsp Anise Extract
  • 1 cup Banana mashed

Instructions

  1. Preheat oven to 350°F.
  2. Toss a few tablespoons flour over dates, currants and hazelnuts and set aside. Blend baking soda, baking powder, salt and cinnamon with remaining flour.
  3. Cream together butter and sugar.
  4. Mix in eggs, anise and banana. Add to dry ingredients, including nuts and fruits, and mix well.
  5. Spoon into an greased 9-inch loaf pan and bake for 40-45 minutes, or until toothpick inserted in the center comes out clean
