Egg Wash
for finishing: in a small bowl whisk 1 Egg and 1 Tbsp cold Water

Instructions
Make the Rolls
Make a “poolish.” In the bowl of a stand mixer add the yeast and warmed milk, and whisk to combine. Scatter the 1/4 cup of flour over the top of the mixture and let sit for 10-15 minutes, or until the surface of the flour begins to crack.
Add the remaining ingredients to the bowl. Attach the bowl to the mixer and fit it with the hook attachment. Turn the mixer to medium-low for 2 minutes, or until the dough comes together. Then turn the mixer up to medium and mix until the dough is cohesive and smooth, about 5-7 minutes.
Grease a large bowl; remove the dough from the mixer and shape it into a ball. Place the ball in the center of the bowl. Cover the bowl with plastic wrap and let it rise for 1 1/2 to 2 hours, or until light and doubled in size.
Once the dough is ready, grease a 9 x 13-inch baking pan. Punch the dough to deflate it, and place it onto a clean work surface. Divide the dough into 18 equal pieces (about 73 gams each). Round each piece into a smooth ball and evenly space the buns in the pan (six rows of three). Carefully cover the rolls with plastic wrap and let rise for an additional 45 minutes to 1 hour, or until they’ve doubled in size.
Toward the end of the rising time, preheat the oven to 350°F. When rolls are ready for baking, brush them with the egg wash and place them on the center rack in the oven to bake for 20-25 minutes, or until the internal temperature reads 190°F on a thermometer.
Remove the pan from the oven. After resting for 5 minutes, turn the rolls onto a baking rack to cool completely. You can use the rolls for sliders (as follows), or use them for any of your other favorite recipes calling for sweet rolls or slider buns.
Make the Sliders
Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
Using a bread knife, cut the entire roll loaf in half (the rolls will stick together). Place the bottom half of the rolls onto the lined baking sheet. Spread the butter evenly along the base. Layer the deli ham, followed by the pork, pickles, jalapenos and the pepper jack cheese.
Spread the top half of the buns with the Dijon mustard and place it on top of the bottom layer.
Place the rolls into the oven on the middle rack and bake for 10-15 minutes, or until the cheese has melted and the sliders are warm throughout. Using a bread knife, cut and separate the individual sliders. Serve immediately.
