Preheat oven to 350°F.
Place a 10-inch cast-iron skillet over high heat. Add oil and swirl to coat. Add onions and cook until tender and browned, 2-3 minutes. Remove from the heat and stir in the sweet corn, herbs and salt. Transfer onion mixture to a plate.
Whisk together eggs, melted butter and water. Add cornbread mix and half the onion mixture and stir just until combined. Pour batter into the hot skillet. Top with remaining half of the onion mixture and cheese.
Bake until a toothpick inserted in the center of the pan comes out clean, 35-40 minutes. Cool at least 15 minutes before cutting. Serve warm or at room temperature.
