Ingredients

  • 2 cups Organic Quinoa Grain cooked according to package and cooled
  • 1 cup Parsley chopped
  • 3/4 cup Onions chopped (or Scallions)
  • 1/2 Peppers small Red, Orange, Yellow and Green Bell Pepper, chopped
  • 2 Tbsp Mint fresh & chopped
  • 3 Tbsp Basil fresh & chopped
  • 2 Garlic cloves, smashed & chopped
  • 1/2 cup Lemon Juice
  • 1/4 cup Olive Oil
  • 1/4 tsp Salt and Ground White Pepper

Instructions

  1. Toss the quinoa and fresh herbs together. Mix in all other ingredients, coating with olive oil last. Chill for at least 40 minutes.
