Quinoa Tabbouleh

Quinoa tabbouleh is a fantastic dish for a warm summer night or a potluck with friends. Can be eaten chilled or at room temperature.  Give traditional tabbouleh a gluten free twist with quinoa! This recipe can be found on our bags of Organic Quinoa Grain.

Ingredients

  • 3/4 cup Organic Quinoa Grain cooked & cooled, see notes
  • 1 cup chopped Parsley
  • 1/2 cup chopped Scallions or Green Onions
  • 2 medium Tomatoes cut into 1/4-inch dice
  • 2 Tbsp chopped fresh Mint or 1 tsp dried
  • 1 Garlic clove minced
  • 1 Tbsp minced Basil
  • 1/2 cup Lemon Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 tsp Salt
  • 1/8 tsp White Pepper

Instructions

  1. Toss together all ingredients. Chill for 1 hour or more to allow flavors to blend. Makes 6 servings.
