Moroccan Couscous

This simple-yet-scrumptious Moroccan Couscous is a snap to make and so delicious. You can substitute the spices with 1 tablespoon Moroccan spice blend.

Ingredients

  • 3 Tbsp Olive Oil
  • 3 cloves Garlic minced
  • 1/2 cup chopped Yellow Onion
  • 1 Tbsp Tomato Paste
  • 1/2 tsp smoked paprika
  • 1/2 tsp Cumin
  • 1/2 tsp Ginger
  • 1/4 tsp Coriander
  • 1/4 tsp Cardamom
  • 1/4 tsp Turmeric
  • 1/4 tsp Cinnamon
  • 1/2 cup Raisins
  • 1 1/4 cups Low-Sodium Chicken Broth
  • 1 cup Golden Couscous
  • 2 tsp Sea Salt
  • 1/4 cup Slivered Almonds
  • 1 Tbsp Minced Fresh Parsley

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onion and garlic until golden, about 4 minutes.
  2. Once onion and garlic are golden, add tomato paste and all the spices. Sauté together, allowing the tomato to caramelize, about 3 minutes. Toss in the raisins and broth. Bring to a boil.
  3. Add couscous and stir until well mixed. Take the couscous off the burner, cover and let cook for 5 minutes off the heat.
  4. Use a fork to fluff the grain and add the salt, slivered almonds and minced parsley.
