Our expert blend of premium flours and stone-ground cornmeal gets a bold upgrade with sweet honey, fresh corn, chopped jalapeño, Tajín seasoning, crema and cilantro. Ingredients

  • 1 package Golden Cornbread Mix
  • ¼ cup Sour Cream
  • ¾ cup Milk
  • 2 Eggs
  • ½ cup melted Butter
  • 1 cup Corn Kernels
  • 3 Tbsp chopped Cilantro
  • 2 Tbsp chopped Jalapeño
Toppings
  • Honey, for brushing
  • ¼ cup crumbled Cotija or Parmesan Cheese
  • 2 Tbsp chopped Cilantro
  • 1 Jalapeño, sliced or chopped
  • Tajín Seasoning
  • Sour Cream or Crema, for drizzling

Instructions

  1. Preheat oven to 375°F. Grease a 10-inch cast iron skillet.

  2. In a large bowl, whisk together sour cream, milk, eggs and melted butter. Add cornbread mix and stir until just combined. Fold in corn, cilantro and jalapeño.

  3. Pour batter into prepared skillet and smooth the top.

  4. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown. Remove from the oven and immediately brush the top with honey.

  5. Let cool slightly, then slice and serve topped with cheese, cilantro, jalapeño, Tajín and a drizzle of crema or sour cream.
